These wonderful organic whole green cardamom pods are sourced from Central America. Buying cardamom in the the whole pod is the best way to preserve their flavor. Seeds (from inside the pods) will more rapidly lose their flavor. They're generally 15-20 seeds within each pod. While it may be a bit of work to get to the seeds the enhanced flavor makes it well worth it. The seeds are a dark brown or almost black and are typically sticky. The rule of thumb for these is the stickier the seed the fresher the product. Cardamom has a flowery, almost eucalyptus flavor with a powerful yet relaxing and fruity aroma. Cardamom is also similar to Chinese Five Spice in the manner that it enhances multiple flavors. Cardamom intensifies both savory and sweet flavors and is a key ingredient in many spice blends – most notably African berbere, curry powders, Garam Masala, Ras El Hanout and Ethiopian Spice Rub. Whole Cardamom pods, when slightly crushed, are used to flavor rice and casserole dishes. We also carry Cardamom Seed Powder and Whole Cardamom Seeds. Cardamom goes great with apples, oranges, pears, sweet potatoes and use whole pods in coffee. Works well in combination with chili powder, cinnamon, cloves, coriander, cumin, paprika, pepper and saffron. |
