Butter Chicken (Makani Chicken)
2 tablespoon canola oil 2 lbs chicken, boneless, skinless, cut in pieces 1/4 cup butter 2 teaspoons Domestic Paprika 2 teaspoons Coriander Seed Powder 2 teaspoons Garam Masala 1 tablespoon fresh ginger, minced 1 clove garlic, minced 1 teaspoon Chili Powder Mild 6 Cardamom Seed 1 Cassia Cinnamon Sticks 10" 1 can (14.5 oz) tomato puree 1 tablespoon sugar 1/4 cup yogurt 1/2 cup cream 1 tablespoon lemon juice Directions: 1. Heat 1 tablespoon of oil in large pan. 2. Add chicken (half at a time) and stir fry until done. 3. Remove chicken and set aside. 4. Reduce heat to low and add butter. 5. Add all of the spices to the pan, paprika thru cinnamon, and stir fry one minute or until fragrant. 6. Return chicken to the pan and stir to coat with spices. 7. Add tomato puree and sugar and simmer 15 minutes. Stir several times. 8. Add yogurt, cream and lemon juice and simmer until the sauce thickens, about 5 minutes. 9. Serve over rice.
