Low Carb Ethiopian Lentil Soup
1/2 cup lentils 4 tablespoons regular or Ethiopian spiced oil 1/3 cup Onion Flakes 1/4 teaspoon mashed and peeled ginger root 1/4 teaspoon Garlic Flakes 7 cups warm water Pinch of Sea Salt Pinch of Cracked Black Pepper Directions: 1. Wash thoroughly and drain lentils 2. In a large saucepan on low heat, add oil and onions, sautéing and stirring constantly until onions are transparent – don’t let them brown – for 8-12 minutes 3. Add garlic and ginger and cook for 5 minute 4. Add lentils and put heat on medium and cook, while stirring, for 4-6 minutes 5. Add warm water, bring to a boil reduce heat to simmer and cook for 25-28 minutes 6. Season to taste with salt and pepper Serves: 4 Prep Time: 15 minutes |
