Mexican chili powder is the powdered form of a red pepper, usually dried Ancho Chiles, while domestic chili powder has additional seasonings such as cumin, coriander, garlic, oregano and salt. In Mexican cooking Cumin plays a significant role as its flavor is the perfect counter balance to the “hotness” of the other spices. You can make your own chili powder paste by mixing one tablespoon of chili powder, one teaspoon of flour, and two tablespoons of cold water. To reach full flavor the paste must reach a boil at some point during cooking. You may also substitute chili powder for chili peppers.

One of our favorite quick snacks is to spread some tortilla chips on a baking dish, cover with a grated cheddar and Monterey cheese mix and then sprinkle with Chili Powder. Place in the oven on broil until the cheese starts to melt. Serve with a cool beverage (like beer).
