Organic Mexican Egg Rolls
(20 oz.) ground turkey 1 can whole kernel corn, drained 1 can black beans, drained & washed 1 1/2 teaspoon Organic Garlic Powder 1 teaspoon Organic Cumin Seed 1/2 teaspoon Organic Red Pepper Flakes 1 can Rotel tomatoes, drained 1 (8 oz.) package Monterey jack cheese handful Organic Coriander Seed Powder Egg Roll Wraps 1 egg, beaten olive oil cooking spray Directions: 1. Preheat oven to 425º F 2. Cook ground turkey on medium heat 3. In a large bowl combine corn, black beans, Rotel, spices, cheese and coriander 4. Drain the cooked ground turkey and add to the bowl 5. Place 1/3 of the mixture into the center of egg roll wrapper 6. Fold the top corner of the wrapper over the filling, tucking the tip of the corner under the filling – fold left and right corners over the filling 7. Brush the remaining corner with egg and tightly roll filled end toward the remaining corner and gently press to seal 8. Grease a baking sheet with olive oil and place egg rolls on sheet 9. Spray tops of egg roll with olive oil 10. Bake for 18-20 minutes or until golden brown Serves: 25 egg rolls Prep Time: 15 minutes |
