Organic Hamburgers with Blue Cheese and Wine
1 750 ML bottle Organic Cabernet Sauvignon 1/4 cup minced shallots 1 teaspoon unsalted butter at room temperature 2 teaspoons light brown sugar 1 tablespoon Organic Thyme Leaf 1 tablespoon Rosemary Leaf 2 pounds ground organic beef 1 teaspoon Sea Salt 1/2 teaspoon Organic Ground Black Pepper Medium Grind Olive Oil 4 Blue cheese slices or 4 teaspoons blue cheese dressing 4 organic hamburger buns 8 slices ripened tomato 2 cups arugula Directions: 1. In a medium saucepan, boil wine, shallots, rosemary and thyme until it reduces to ¾ cup 2. Remove from heat and add butter and brown sugar whisking until butter melts and sugar dissolves 3. Set barbeque grill to med-high heat 4. In a separate bowl, mix beef, salt, pepper and ¼ cup of the wine liquid 5. Shape meat mix into four rounds 6. Brush grill rack with oil 7. Grill burgers about 4 minutes until brown on one side 8. Repeat on the other side brushing with the wine mix cooking 3-4 minutes 9. Place blue cheese slices until cheese melts 10. Grill buns until golden 11. Serve with tomatoes and arugula (and blue cheese dressing) as sides to be used as desired Serves: 4 Prep Time: 15 minutes |
