Low Carb Fried Chicken
Total Carbs 2.4g 16 oz boneless skinless chicken breasts, butter flied and lightly pounded (4-4 oz. pieces) 1/2 cup chopped pecans, divided, 1/4 cup finely ground and 1/4 cup coarsely ground 1 egg, beaten 4 egg whites, beaten 2 pinches Ground Black Pepper Medium Grind 2 pinches Sea Salt 2 tbsp safflower oil Directions: 1. Season chicken with salt and pepper 2. In a bowl, combine egg and egg whites 3. Dip chicken into the finely chopped nut mixture, coating evenly 4. Dip the chicken into the egg mix and then into the coarsely chopped nuts 5. Add the oil to a frying pan and fry the chicken for 4-5 minutes on each side or until golden brown 6. Move chicken carefully to paper towels to drain 7. Season with salt and serve Serves: 4 Prep Time: 15 minutes |
