Low Carb Bacon, Lettuce & Tomato Brushetta
8 piece Bacon, cured, pan fried , crispy and crumbled 1 1/3 cup tomatoes, seeded and chopped 1 cup Lettuce, Boston, fresh, shredded 2 tablespoon Sweet Basil 1/4 cup Garlic Flakes 1/4 teaspoon Sea Salt 1/4 teaspoon Ground Black Pepper Medium Grind 1/3 cup olive oil 8 oz French bread baguette , cut in 24 1/4-inch slices 1/3 cup crumbled blue cheese, or feta or goat cheese (cheese is optional) Directions: 1. Preheat oven to 400º F 2. Stir all the ingredients through pepper into a medium bowl and put aside 3. Brush olive oil on both sides of the sliced baguette and place on a baking sheet 4. Place baking sheet in oven and cook for 6-8 minutes or until golden brown and crisp 5. Turn bread over and repeat the baking time 6. Serve while warm, topping each piece of bread with a tablespoon of the topping Serves: 24 slices Prep Time: 20 minutes |
