Vegetarian Chunky Breakfast Hash
1 tablespoon canola oil 3/4 cup chopped yellow bell pepper 1/4 cup chopped green onions 2 tablespoons dried chives 1 1/2 cup low fat egg product 1 tablespoon Organic Dill Weed 1/2 teaspoon Sea Salt 1/2 teaspoon Cracked Black Pepper 3/4 pound cooked, unpeeled small red potatoes, cut into fourths 9 oz frozen baby sweet peas, thawed 1 cup chopped tomato 1/2 cup plain yogurt 1/2 cup low fat shredded Cheddar Cheese Directions: 1. In a 10 inch skillet over medium heat, heat oil 2. Add pepper, onions and chives and cook 2-3 minutes stirring occasionally or until pepper is crispy 3. Stir in egg mix and dill, still on medium heat, for 3-4 minutes 4. When egg mix is thickened but still moist, stir in potatoes, salt, pepper and peas and cook until all is hot 5. Serve with tomato, yogurt and cheese as topping Serves: 4 Prep Time: 20 minutes |
