Vegetarian Burger Stew

Vegetarian dishes are becoming more and more mainstream with many recipes that 're-create' traditional meat dishes. This is one of those recipes.

Stew is a wonderful meal that is full of vegetables and traditionally made with beef. This recipe takes the stew recipe, keeps all the wonderful vegetables but instead of meat, we used vegetarian burgers. These burgers are prepackaged and available in the frozen food section of most grocery stores. There are many varieties and flavors to choose from. I wanted to add my own spices, so I chose a soy burger that did not have added spices.

Because the vegetables in this recipe are some of my favorites to roast, I decided to roast the potatoes, turnips, rutabagas and carrots in advance so that they could be added to the stew to cut down on the prep time. Cut the vegetables and drizzle with a little olive oil and/or your favorite spices - roast about 45 minutes at 350 degrees. Let them cool and refrigerate until the night you are ready to make the stew.

I have to say, we really enjoyed this meal and didn't miss the beef at all. Great idea for a 'Meatless Monday' dish.

Vegetarian Burger Stew

Ingredients:

  • 2 cups cubed red skinned potatoes (Sweet potatoes would be a good alternative here as well)
  • 2 small turnips, peeled and cubed
  • 2 cups rutabaga, peeled and cubed
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 3/4 cup diced onions
  • 1/4 cup all purpose flour
  • 1 1/2 cups vegetable broth
  • 2 cups undrained diced tomatoes (there are about 2 cups in 1 16oz can)
  • 2 tablespoons Thyme Leaf
  • 2 tablespoons Marjoram Leaf
  • 1 tablespoon Italian Seasoning
  • 1/2 teaspoon Cracked Black Pepper
  • 1 Bay Leaf
  • 4 thawed vegetarian burgers cut in 1 inch pieces

Directions:

  1. In a 4 quart Dutch oven, add potatoes, turnips, rutabaga, carrots and onions
  2. In a bowl mix flour and broth until blended and smooth
  3. Stir broth mixture over the vegetable mix
  4. Add all remaining ingredients except burger
  5. Heat on medium until boiling, stirring frequently, then add burger, stirring as you add
  6. Simmer on stovetop until vegetables are tender and sauce is thickened - about 15 minutes.
  7. Remove bay leaf and serve
