Lemon Poppy Seed Muffins
Buttery cooking spray 3 cups all purpose flour 1 tablespoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon Sea Salt 1 tablespoons Grade A1 Poppy Seed 1 1/4 stick unsalted butter 1 cup sugar 2 large eggs 1 1/2 cup plain yogurt 1 tablespoon Lemon Peel Directions: 1. Preheat oven to 375º F 2. In a bowl, whisk flour, baking powder, baking soda, poppy seeds and salt 3. In a large mixing bowl cream butter and sugar until fluffy, 2 minutes or so 4. In the butter mix add eggs one at a time and blending after each egg 5. Beat in the lemon peel 6. Add one half of the dry ingredients until blended 7. Add one third of the yogurt and beat 8. Add one half of the remaining dry ingredients and beat 9. Beat in 1/2 of the remaining yogurt 10. Beat in the remaining dry ingredients and then the remaining yogurt, beat until blended 11. Spray a 12 count muffin tin with buttery cooking spray 12. Divide the dough evenly into the 12 cups 13. Bake 25-30 minutes or until muffins are golden brown and a toothpick test in the middle of a muffin comes out clean 14. Place muffin tin on a wire rack for 5-7 minutes to cool 15. Remove from pan Serves: 12 muffins Prep Time: 15 minutes |
