Almond Poppy Seed Bread
3/4 cup sugar 1/4 cup unsalted butter, softened 3 egg whites, lightly beaten 1/2 cup + 2 tablespoons buttermilk 3/4 cup sour cream 1 tablespoon Organic Almond Extract 2 cups all-purpose or white whole wheat flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon Sea Salt 1 tablespoon Grade A1 Poppy Seed Directions: 1. Preheat oven to 350º 2. Grease large loaf pan 3. Using a stand mixer bowl, beat sugar and butter until light and fluffy 4. Add egg whites, buttermilk, sour cream and almond extract and beat until well blended 5. In a separate medium bowl, whisk flour, baking powder and soda and salt 6. Placing the stand mixer to low, slowly add the dry ingredients until not quite blended, add poppy seeds 7. Beat until all the wet, dry and poppy seeds are well combined 8. Using a rubber spatula, pour the batter into the greased loaf pan and smooth the top 9. Bake for 58- 67 minutes until a toothpick comes out from the center clean Serves: 12 Prep Time: 15 minutes |
