Duck Curry
2 ducks, deboned and cut into bite size pieces 2 onions, chopped 5-6 cloves garlic, chopped 1 tablespoon Crystallized Ginger chopped 2 tablespoons Curry Powder Medium Heat 1/2 teaspoon Korintje Cinnamon Powder 8 pieces dried daun pandan 2 stalks Lemon Grass 3 cups coconut milk 1 teaspoon Sea Salt 1/4 cup vinegar 1/4 cup whisky 1 tablespoon brown sugar 2 tablespoons oil Directions: 1. In a large heavy saucepan, combine duck pieces and all other ingredient except whisky, sugar and oil. 2. Bring to a boil, reduce heat and simmer, covered until duck in tender, about 15 minutes. 3. Remove duck pieces from pan. 4. Heat oil in another large skillet, fry pieces of duck. Add sauce, whisky and sugar and simmer for another 10 minutes. 5. Serve over rice. Serves: 6-8 Prep Time: 50 minutes |
