Low Sugar Chewy Oatmeal Cookies with Peanut Butter and Raisins
Cooking spray 9 oz low sugar chunky peanut butter 4 cup quick cooking rolled oats 5 cup white all purpose flour 1 pint unsweetened applesauce 3/4 cup sugar substitute 1 egg 1/2 teaspoon Ginger Powder 1/2 teaspoon Korintje Cinnamon Powder 1/2 teaspoon Ground Cloves 1 cup water 3/4 cup seedless raisins 1 teaspoon Soda, club 1 teaspoon Vanilla Extract Directions: 1. Preheat oven to 350º F 2. Spray cookie sheets with cooking spray 3. Mix peanut butter, egg, vanilla, water, all spices, applesauce, sugar substitute and soda on medium speed for 1 minute 4. Add raisins and oatmeal and on medium speed, mix for another 2 minutes, scraping sides of bowl 5. Add flour slowly on slow speed until all is just blended; the dough should be wet but not too juicy. 6. Add a bit more flour if needed 7. Shape dough into 1 inch balls and place on cookie pan 8. Using a fork, press down on each ball dipping the fork into flour to keep fork from sticking to dough 9. Bake in oven 17-20 minutes 10. Remove from oven and remove cookies to a rack to cool Serves: 40 cookies Prep Time: 30 minutes |
