Zucchini Frittata
6 large eggs 2 teaspoons Parsley 1/2 teaspoon Sea Salt 1/8 teaspoon Ground Black Pepper Medium Grind 1/8 teaspoon Rosemary Leaf, crushed 2 tablespoons light cream 1 cup zucchini, thinly sliced 1/2 cup green onion, sliced 1 tablespoon butter 2 tablespoons parmesan cheese, shredded Directions: 1. In a medium bowl, whisk together the first 6 ingredients (eggs thru cream). 2. Melt butter in large ovenproof skillet and sauté zucchini and onion until just tender. 3. Pour egg mixture over vegetables and cook over medium heat. 4. As mixture begins to set, run a spatula around the edges and lift so uncooked mixture can run underneath. 5. Continue until the center is almost set (it will still be moist). 6. Place uncovered skillet in a 400° oven for about 5 minutes or until the top is set. 7. Sprinkle with parmesan cheese.
