Tomato Basil Bisque
1 tablespoon olive oil 3 tablespoons butter 1 large onion, chopped 2 celery ribs, chopped fine 3 clove garlic, minced 3 cans (14.5 oz) dice tomatoes or 6-8 large fresh tomatoes 1 small can tomato paste 1 teaspoon sugar 1 tablespoon Parsley 1 teaspoon Sweet Basil 1 teaspoon Sea Salt 1/2 teaspoon Thyme Leaf, crushed 1/2 teaspoon Red Pepper Flakes 1/8 teaspoon Ground Black Pepper Coarse Grind 4 cups chicken broth 1/2 cup cream Directions: 1. In a large stockpot, melt butter over medium heat. 2. Add onion and celery and sauté about 4 minutes or until onion is translucent. 3. Add garlic, tomato paste and tomatoes to the pot and stir until mixture is heated through. 4. Add sugar thru pepper to the pot and mix well. 5. Mix in the chicken broth and bring to a boil. 6. Reduce heat and carefully remove 1/2 of the soup and puree in a food processor or blender and return soup to pot. (Or remove pan from heat and use a hand blender to puree soup). 7. Stir in cream. 8. Garnish with croutons, fresh basil or parmesan cheese if desired. Serves: 8 Prep Time: 30 minutes |
