Saffron Garlic Shrimp
1/3 cup olive oil 2 pinches Saffron 2 cloves garlic, minced 2 tablespoons lime juice 20 raw jumbo shrimp Directions: 1. Whisk together first four ingredients in a non reactive bowl. 2. Add shrimp and stir to coat. 3. Cover and refrigerate for at least 1 hour and up to 3 hours. 4. Heat grill to med-high heat. 5. Push shrimp onto 4 skewers and grill for about 2 minutes per side or until opaque in the center. 6. Baste with marinade. 7. Or sauté shrimp in marinade in a large skillet for about 2 minutes each side or until opaque in the center. 8. Serve immediately over pasta or rice. Serves: 4-6 Prep Time: 10 minutes (excluding marinating time) |
