Chermoula or charmoula is a marinade used in Algerian, Moroccan and Tunisian cooking. It is usually used to flavor fish or seafood, but it can be used on other meats or vegetables. This marinade is similar to a pesto, very flavorful, aromatic and pairs perfectly with salmon.
This was an easy meal to prepare for the grill, but could be roasted in the oven. I served this with some Harissa Couscous for a flavorful North African style dinner. Charmoula can also be used with lamb, chicken or duck.
