Zucchini Spice Bread
1 large zucchini, 1 3/4 cups 1 cup packed light-brown sugar 2 tablespoons granulated sugar 2/3 cup vegetable oil 2 teaspoons Vanilla Extract 2 teaspoons Pumpkin Pie Spice 2 large eggs 1 1/2 cups flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoons Korintje Cinnamon Powder 3/4 teaspoon Nutmeg Powder 1/4 teaspoon Ginger Powder 1/4 teaspoon Ground Cloves 3/4 teaspoon Sea Salt Directions: 1. Preheat oven to 350º 2. Lightly coat a 9 x 5 x 3 loaf pan with cooking spray 3. Grate zucchini on large holes on grater 4. Whisk sugars, eggs, vanilla and oil in a small bowl 5. Sift together in a small bowl flour, baking soda, baking powder, pumpkin spice, cinnamon, ginger, cloves, nutmeg and salt 6. Add flour mix to egg mix and stir until combined 7. Stir in zucchini 8. Pour into pan spreading evenly 9. Bake about 45 – 50 minutes or until a toothpick inserted in center comes out clean 10. Cool in pan 10 minutes, invert on to wire rack, then reinvert 11. Let cool completely Serves: 12 Prep Time: 20 minutes |
