Zucchini Chips
1/4 cup dry breadcrumbs 1/4 cup (1 ounce) grated fresh Parmesan cheese 1/4 teaspoon Italian Seasoning 1/4 teaspoon Garlic Powder 1/8 teaspoon Ground Black Pepper Medium Grind 2 tablespoons fat-free milk 2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small) Cooking spray Directions: 1. Heat oven to 425º F 2. Mix breadcrumbs, cheese, Italian seasoning, garlic and pepper in a bowl 3. Put milk in a shallow bowl 4. Pat as much moisture as you can out of the zucchini 5. Dip slices in milk and dredge in breadcrumb mix 6. Take a ovenproof wire rack and spray with cooking oil and put on top of a baking sheet 7. Place coated slices on rack 8. Bake until chips are brown and crisp for 26-32 minutes Serves: 4 Prep Time: 15 minutes |
