Zucchini Fritters
1 pound zucchini 1 teaspoon Sea Salt 1 tablespoon Lemon Peel 1/3 cup Parsley 1/4 cup Granulated Garlic 1/4 teaspoon Ground Black Pepper Medium Grind 2 eggs lightly beaten 1/2 cup breadcrumbs 4 tablespoons olive oil Directions: 1. Squeeze the zucchini to make as dry as possible and then grate zucchini, using the large holes on the grater, into medium bowl 2. Add salt, lemon peel, parsley, pepper, garlic and eggs 3. Mix until blended 4. Add breadcrumbs slowly stirring 5. In a large pan heat oil on medium to high heat until oil sizzles when a small drop of the mixture in put into the oil 6. Carefully add 2 tablespoons at a time of the zucchini mixture into the pan keeping a couple of inches between the fritters 7. Cook until fritters are golden, lower heat to medium, turn and cook another 3 minutes 8. Remove from pan to a serving plate and place in low temperature oven to keep warm 9. Continue cooking rest of fritters 10. Garnish with parsley and lemon wedges Serves: 6 Prep Time: 20 minutes |
