Macadamia and Dried Cranberry Butter Cookies
2/3 cup macadamia nuts 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1 teaspoon Vanilla Extract 1 large egg 1 1/4 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon Sea Salt 1/8 teaspoon Nutmeg Powder 1/2 cup sweetened dried cranberries, chopped 1 tablespoon granulated sugar 1. Heat oven to 375 F 2. Place nuts in a food processor for 2 minutes or until smooth cleaning bowl sides 3. In a separate bowl, mix macadamia mix with sugar and brown sugar and beat with mixer on medium 4. Add egg and vanilla and beat well 5. Spoon flour into measuring cup and level with a knife 6. Mix flour, salt, nutmeg and baking soda 7. Add flour mixture to sugar mixture and beat on low speed until combined 8. Stir in chopped cranberries 9. The dough is very thick and it helps if you chill the dough before proceeding about 12 minutes 10. Divide chilled dough into approximately 30 equal pieces 11. Roll each piece into a ball 12. In a small bowl put in 1 tablespoon of sugar and press each ball into the sugar, gently 13. Place each ball, sugar up, on a baking sheet covered with parchment paper 14. Make crisscross patterns on top of each ball with a fork, flattening the balls a bit 15. Bake one pan at a time for 9-10 minutes until golden Serves: about 30 cookies Prep Time: 25 minutes |
