Alfredo Zucchini Side Dish
5 large zucchini (about 2-1/2 lb. total) 1 teaspoon Sea Salt 1/4 cup Granulated Garlic 2 tablespoons olive oil 1 8-ounce package cream cheese, cubed and softened 3/4 cup half-and-half or light cream 1/2 cup finely shredded Parmesan cheese Pinch of Ground Black Pepper Coarse Grind Pinch of Nutmeg Powder Finely shredded Parmesan cheese Directions: 1. Cut zucchini in half crosswise and then cut lengthwise into 1/4 inch slices 2. Next, cut lengthwise into long thin strips ¼ inch strips, like thick spaghetti 3. Toss zucchini and salt in a colander and set aside 4. Rinse and let drain for 45 minutes 5. Pat zucchini dry 6. Add oil to a 12 inch skillet and cook zucchini and garlic on medium to high heat for 4 minutes or until crisp tender 7. Place the zucchini mix into a large bowl 8. Place the cream cheese and half and half in the skillet on medium to low heat until it stirs smoothly 9. Add 1/2 cup of parmesan and put the zucchini mix into the skillet and heat thoroughly 10. Move to a serving dish and sprinkle pepper, nutmeg and the rest of the Parmesan cheese 11. Keep warm in s very low oven temperature Serves: 8 Side Dishes Prep Time: 30 minutes |
