Spicy Steaks
1 teaspoon Cumin Seed 1 teaspoon Fennel Seed 1 teaspoon Coriander Seed 2 cloves garlic, minced 1/2 teaspoon Sea Salt 1/4 teaspoon Ground Black Pepper Coarse Grind 4 steaks, boneless top loin 1 tablespoon olive oil 2 tablespoons dry red wine Directions: 1. Toast cumin, fennel and coriander seeds in a small skillet until fragrant. 2. Coarsely grind seeds in a coffee or spice grinder or use a mortar and pestle. 3. Combine ground spices, garlic, salt and pepper in a small bowl. 4. Rub spice mixture into both sides of meat, cover and chill for 8 to 24 hours. 5. In a small bowl, combine oil and wine. Brush onto both sides of the steak. 6. Grill, uncovered over medium heat for 10 minutes for medium rare and 15 minutes for medium. 7. Turn once during grilling. Prep Time: 20 minutes Serves: 4-6 |
