Chocolate Chunk-Peanut Cookies
1 cup vegetable shortening 1 cup chunky peanut butter 1 cup granulated sugar 1 cup firmly packed brown sugar 2 large eggs 2 cups all-purpose flour 1/3 cup Organic Cocoa Powder 1 1/2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon Korintje Cinnamon Powder 1 cup dry-roasted peanuts 1 (10-oz.) bag dark chocolate chunks Directions: 1. Beat shortening at medium speed with an electric mixer until creamy 2. Add peanut butter and sugars, beating well 3. Add eggs one at a time until well blended 4. In a separate bowl, whisk flour, Cocoa Powder, baking soda and baking powder 5. Next add the flour mixture, slowly, to the butter mixture and beat well 6. Stir in the chocolate and peanuts 7. Using an ungreased baking sheet, shape the dough into 2 inch balls and place them on the pan flatten the dough a bit 8. Leave room between each ball and bake 12-15 minutes until they brown lightly 9. Let them cool on pan for 2 minutes before removing Serves: Makes up to 4 dozen Prep Time: 20 minutes |
