Low Sodium Sweet Curry Melon
1 large melon Mint leaves 1 teaspoon honey 1 teaspoon Lemon Peel 1 teaspoon lemon juice 1/4 teaspoon Korintje Cinnamon Powder 1/4 teaspoon Cardamom Seed Powder 1/4 teaspoon Ginger Powder 1/4 teaspoon Ground Cloves Nutmeg Powder to taste 1 cup vanilla yogurt Directions: 1. Mix the yogurt and the spices through cloves in a large bowl 2. Cover bowl and place in refrigerator for 25-35 minutes 3. Prepare the melon by cutting in half, removing seeds 4. Scoop out the melon flesh with a melon ball and place in a large bowl 5. Place about 1 cup of melon balls into each of 4 bowls and add 2 tablespoons of cream over the melon balls Serves: 4 Prep Time 20 minutes |
