Achiote Chicken with Black Beans
Chicken: 4 chicken breasts, skin on 3 tablespoons vegetable oil 1 teaspoon Achiote Seed 1/2 cup onion, chopped 2 tablespoons water Sea Salt to taste Ground Black Pepper Medium Grind to taste Black Beans: 1 can black beans 1 cup onion, chopped 1 fresh tomato, chopped 1 garlic clove, minced 1 teaspoon Chili Powder Mild Directions: 1. Combine annatto seeds, onion, water, salt and pepper in a food processor and process to a paste. 2. Coat chicken with paste and pan fry skin side down first over low heat, turning once, until cooked. 3. 3. Season with salt before removing from pan. 4. Combine black beans, onion, tomato, garlic and chili powder in a saucepan and heat over medium until beans are warm. 5. Serve chicken with black beans. Serves: 4 |
