Achiote Oil
(Pronounced (ah-chee-OH-tay) 1/2 cup vegetable oil 1 tablespoon Achiote Seed Directions: 1. Heat oil and seeds in a small skillet over medium high heat just until the seeds start to sizzle. 2. Remove pan from heat and let stand until cool. 3. Do not overheat the mixture or seeds will turn black. 4. Strain the oil and store in a glass jar with a tight fitting lid. Notes: 1. The oil will last four days at room temperature. 2. Use in traditional yellow rice recipes or to sauté onions and garlic. 3. It can also be used straight to season fish and poultry. Caution, the oil will stain anything it touches. Prep Time: 5 minutes |
