Tomatoes and Okra
1 lb okra (small pods 3-4 inches) 2 tablespoons olive oil 1 1/2 cups onion, chopped 1 1/2 teaspoon Sea Salt 2 cloves garlic, peeled and minced 2 cups tomato, peeled and chopped or 1 can diced tomato 1 tablespoon fresh ginger, minced 1 teaspoon Grains of Paradise, freshly ground 1/2 teaspoon Cardamom Seed Powder Directions: 1. Wash okra and trim ends. Cut each okra in half. 2. Add olive oil to saucepan and place over medium heat. 3. Add onions and salt and cook until onions are translucent. 4. Add garlic and cook one more minute. 5. Add tomatoes and bring mixture to a boil. 6. Lower heat and add ginger, Grains of paradise, Cardamom and okra, stir to combine. 7. Cook uncovered for 20 minutes. Remove from heat and serve immediately. Serves: 4-6 Prep Time: 30 minutes |
