College Kids Need Spices Too

Here is one of our latest limited edition spice sets this one was created by Tracy W. of Spring Lake, Michigan. This is what Tracy said about choosing these spices " I couldn't decide whether to go Mexican, exotic, traditional or daring..... finally I came up with a perfect idea! I call my collection "College Kids Need Spices Too" and I dedicate it to my two college-age children. They are living on their own and doing great in the kitchen! They grew up eating all kinds of food here at home, with every spice imaginable on their plate. There's no reason in the world college kids need to open the cupboard and only find salt and pepper (or worse!). What mother wouldn't want this for her babies? :)"

Lime Pepper - This is not one of the more common pepper blends that we carry but it is certainly one of the more unique. Our hand blended lime pepper was first requested by a Tucson area restaurant that asked us to create a pure Lime Pepper using just lime zest and several mesh sizes of freshly ground black pepper. After several test blends this is the one that they liked best.
Bourbon Barrel Smoked Pepper - Struck by the flavorful smoked combinations of our popular smoked chiles and smoked salts and driven by several of our customers who asked us for a top grade smoked pepper we went in search to find a high quality pepper to fit this bill. We’ve found one that is sure to become a fast rising star in your kitchen and you’ll certainly be able to impress your friends and family as well.
Smoky Citrus Salt - This is a gourmet flavored salt that we did a great deal of research on. We wanted something a bit more robust than the boring citrus zest and sea salt combinations that we found on the market. We ended up with numerous test batches until we settled on our Smoked Citrus Salt that we felt really fit the bill.
Cilantro - Discerning cooks prefer to use fresh cilantro but often your recipe only calls for just a little bit and of course the grocery stores won’t sell you “just a pinch”. Keeping some dried cilantro on hand for emergencies (or when your store bought cilantro goes bad way too fast) is not a bad idea.
Chipotle Honey Rub - This one of our more popular "beginners" rubs that is ideal for chicken or fish. We absolutely love the sweet taste of the honey combined with the smoky flavor of the ground chipotle powder and the Spanish paprika. Best of all the granulated honey really helps to form the perfect crust that all good barbequed grilled chicken should have.
Kickin’ Chicken - This is a delightful chicken dry rub that has a hint of heat with it and all of the ingredients are finely ground and perfectly hand blended. The reason that this is important is to eliminate any flavor explosions. For instance it you bite into a celery seed or a crushed red pepper flake it releases a rush of intense flavor. These flavor explosions might be a bit overpowering and that takes away from the balanced flavor of the meat. This is why we ground the celery seed and the red pepper flakes for this dry spice chicken rub to eliminate any unexpected bursts of flavor.
