Ethiopian Chicken (Doro Wat)
2 lb chicken cut into pieces 1 onion, diced 1 clove of garlic, minced 2 tablespoons olive oil 2 tablespoon tomato paste 1/2 cup water 1/2 cup cilantro, chopped 2 tablespoons Berbere Directions: 1. Sauté onion in olive oil until translucent. 2. Add chicken, 2 tablespoons of the Berbere and garlic. 3. Coat chicken well, add tomato paste and water and stir well. 4. Simmer for 35-45 minutes. 5. Add cilantro and taste to adjust seasoning. 6. Serve over rice. Serves: 4-5 |
