Apricot Turkey Roll
1 egg, lightly beaten 3 tablespoons butter, melted 3 tablespoon fresh parsley, chopped 2 cups dry breadcrumbs 1/2 teaspoon Dried Rosemary Leaf 1 1/2 Caraway Seed, crushed 2 1/4 lbs oven-roasted turkey breast roll 1/3 cup apricot jam Directions: 1. Preheat oven to 350°. 2. Combine first 6 ingredients in a bowl and mix thoroughly. 3. Cut a deep pocket along center of roll and fill with seasoning mixture. 4. Brush turkey roll with jam and secure roll with kitchen string at 2 inch intervals. 5. Place roll on wire rack in a baking dish with 1/2 inch of water in bottom of dish. 6. Bake uncovered about 45 minutes or until done. Serves: 8 Prep Time: 55 minutes |
