Cajun Chicken Maque Choux
Maque Choux is a traditional Cajun dish pronounced 'Mock-Shoe' and is believed to have been an early fusion dish of Acadian French (Cajun) and American Indian cultural influence, and the name is derived from the French interpretation of the Native American name.

I made a healthy version of this Cajun recipe and the base ingredient is corn. Fresh from the cob is the best way to go because the corn milk that comes from cutting corn from the cob actually helps develop the creaminess in this dish. Because corn isn't currently in season I did use frozen for this recipe.

Shrimp, crawfish and/or sausage can be added to Maque Choux along with chicken for a hearty meal. Just wait until the last few minutes of cooking to add the shrimp - it only takes a few minutes to cook. 

Cajun Chicken Maque Choux

Ingredients:

Directions:

  1. In a small bowl combine garlic powder, onion powder, dried oregano, dried thyme, paprika and cayenne pepper - mix well.
  2. Place 2 Tablespoons of the spice mixture in a shallow dish and add chicken, covering all pieces completely with the spice mixture.
  3. In a dutch oven or large skillet heat olive oil to medium high heat and add chicken browning on all sides.
  4. Remove chicken from the pan and set aside.
  5. Add bell pepper and onion to pan and saute for about 2-3 minutes.
  6. Add corn, remaining spice mixture, tomaotes, half n half.
  7. Cover and cook over medium heat about 30 minutes.
  8. Add chicken back to the pan, nesting it down into the corn mixture.
  9. Cook an additional 15 minutes or until chicken is cooked through.
  10. Spoon into serving bowls and garnish with bacon and parsley.
