Turkey Spinach Salad
3 tablespoons butter 2 boneless skinless turkey breasts 1/4 teaspoon Ground Black Pepper Coarse Grind 1/4 teaspoon Coriander Seed Powder 2 tablespoons bacon, cooked and chopped or 2 tablespoons Imitation Bacon 1/2 cup orange juice 1 9 oz bag fresh spinach 1 15 oz can mandarin oranges, drained Sea Salt to taste Directions: 1. Heat butter a large skillet over medium high heat. 2. Season turkey with pepper and coriander; cook for about 12 minutes or until no longer pink. 3. Remove turkey from skillet and slice into diagonal strips and keep warm. 4. Add juice to skillet and bring to a boil. 5. Add spinach, one half at a time, to skillet cook until just wilted, about 1 minute. 6. Add oranges with second batch of spinach. Remove from skillet and divide among 4 plates. Sprinkle with sea salt and pepper. 7. Top with turkey and bacon. Drizzle remaining juice from skillet over salad. Serves: 4 Prep Time: 20 minutes Note: If you do not have orange juice, use the juice from the can of oranges. |
