Tex-Mex Nut Burgers
1 cup cooked rice 1 small green pepper, minced 1 clove garlic, minced or 1/8 teaspoon Garlic Powder 1/4 cup onion, minced 2/3 cup ground almonds 2/3 cup ground roasted peanuts 2/3 cup raw ground sunflower seeds 1/4 cup ketchup 1 tablespoon Worcestershire sauce 1 tablespoon cider vinegar 1 tablespoon Chili Powder Mild 1 teaspoon Yellow Mustard Seed Powder 1 teaspoon Ground Cumin 1 teaspoon brown sugar 1/2 teaspoon Coriander Seed Powder 1/4 teaspoon Cayenne Pepper Medium Heat 1 tablespoon olive oil Fresh Ground Black Pepper Coarse Grind Directions: 1. Combine all ingredients in a glass bowl except olive oil and mix thoroughly. 2. Use 1/2 cup mixture for each patty. 3. Place patty between two pieces of waxed paper and shape into 4-1/2 inch circles. 4. Add olive oil to a heavy nonstick skillet over medium heat and cook burgers for 1 minute then turn and cook another 2 or 3 minutes until lightly browned. Sprinkle with pepper while cooking. 5. Drain burgers on paper towels before serving on buns or pita bread. Garnish with fresh salsa. Serves: 4 Prep Time: 30 minutes |
