Green Curry Paste
10 large green chilies, seeded 3 shallots sliced 8 cloves garlic, minced 1 teaspoon fresh ginger, minced 1/2 teaspoon Turmeric Powder 1/2 teaspoon Korintje Cinnamon Powder 1/2 teaspoon Nutmeg Powder 1/2 teaspoon Cardamom Seed 1/4 teaspoon Ground Cloves 1 tablespoon sliced fresh Lemon Grass 1 teaspoon chopped coriander root 5 White Peppercorns 1 tablespoon roasted Coriander Seed 1 tablespoon roasted Cumin Seed 1 teaspoon Sea Salt 1 teaspoon shrimp paste Directions: 1. Combine coriander seeds, cumin seeds, and peppercorn and grind or pound to a powder. 2. Process chilies, shallots, lemon grass, ginger and salt together in a food processor, add remaining ingredients except shrimp paste. 3. Add the cumin mixture and shrimp paste and mix until smooth and fine. |
