Basil Frittata
1/4 teaspoon Dried Thyme Leaf 1/4 teaspoon Dried Mediterranean Oregano 1/4 teaspoon Dried Sage 2 tablespoons butter Salt and pepper to taste 14 eggs 5 medium Roma or Plum tomatoes, sliced 1 tablespoon Dried Sweet Basil 8 ounces cream cheese, cubed Directions: 1. Whisk together eggs, salt, pepper, thyme, oregano and sage. 2. In a large ovenproof skillet, sauté tomatoes and basil in butter over medium heat for 1-2 minutes. 3. Pour egg mixture over tomato mixture and top with cream cheese cubes. 4. Cover and cook over low heat about 20 minutes or until set on top or cook until partially set and finish cooking the top under a broiler set on low. Serves: 10-12 Prep Time: 30 minutes |
