Tomato Basil Soup 4 cups tomatoes, peeled and chopped or 4 cups canned tomatoes 3 cups tomato juice 1 cup chicken broth 1 1/2 teaspoons Sweet Basil 1 cup cream 1/2 cup unsalted butter 1/2 teaspoon Sea Salt 1/4 teaspoon fresh Ground Black Pepper Coarse Grind Directions: 1. Combine tomatoes, juice, chicken broth and basil in a saucepan and simmer for 30 minutes. 2. Puree mixture in food processor in small batches and return to saucepan over low heat. 3. Stir in butter and cream. Season with salt and pepper. Serves: 8, Prep Time: 45 minutes |
