We love using dehydrated vegetables in our stews, soups and chilis. Our Organic Dried Red Bell Pepper flakes are the unassuming cousin of the spicier and bolder chile pepper and we prefer these over the more common (and boring) green bell pepper as it is a bit sweeter. These are often also referred to as dried sweet peppers.
You’re certainly familiar with this boxy shaped pepper and probably use this “vegetable” on a regular basis in your every day meal prep. But like the tomato the bell pepper is not really a vegetable but is actually considered a fruit. Archeologists have unearthed prehistoric Peruvian sites dating back more than 6,000 years that revealed the earliest South Americans used bell peppers to flavor foods. In addition to chili, soups and stews we love to use these dried red bell pepper flakes in bean dishes, dips, marinades, meatloaf, omelets, pasta salads, salsas, stir fries and wraps. We’ve found that these also provide a “meatier” texture to the dish when used in place of fresh bell peppers. You’ll love the vibrant red color that these peppers add to any dish. It takes almost 10 lbs of fresh bell peppers to make 1 lb of dried sweet peppers so these are actually quite economical as well as handy to have around. These come in at a 0 on the heat scale of 0-10 (10 being the hottest). While we like to add these towards the end of the cooking process, ideally 15-20 minutes before the dish is finished, you can also rehydrate them by using 2 parts cold water to 1 part dried red peppers. Cover with the water and then let sit for about 60 minutes then just drain off excess liquid and you’re good to go. We like to keep dried vegetables around for easy use when we’re out of fresh or when unexpected family and friends drop by unexpectedly. You can use dried red bell peppers in any recipe that calls for fresh and as a rule of thumb we use 1 tablespoon of dehydrated to 3 tablespoons of fresh diced or chopped peppers.
