Slow Cooker Borracho Beans

Pinto beans were a staple in my house growing up.  Easy to make, low fat, full of protein and fiber and budget friendly.  This is a great one pot meal that can be prepared quickly or slow cooked all day in the slow cooker.  Add a bottle of beer and the traditional pot of pinto beans become Borracho Beans or 'Drunken Beans' taking on a savory, saucy flavor from the beer.

This dish is traditional South Texas fare, many restaurants in the Austin and San Antonio area will have their own versions of this recipe.  However, I came across a recipe for Borracho Beans on a website recently and it didn't include the beer - Boy! - fans of this dish took notice commenting that beer is what makes this dish - don't leave out the beer - or don't call them Borracho Beans.

We used our Salt Free Adobo Seasoning and Dried Cilantro to really bring the flavors out in this meal.  I like the Chipotle 'Meco' Chiles (4-6 on a heat scale of 10) because they aren't quite as hot as the Morita Chipotles (6-7 on a heat scale of 10) - but use the hotter chiles if you dare.  Remove the seeds before adding them to your recipes to reduce the intensity of the heat.


Borracho Beans

Ingredients:

  • 4 cups of cooked pinto beans still in its juice or three 14 oz. cans pinto beans.
  • 4 slices of bacon, chopped into 1-inch pieces
  • 2 cups fresh chopped tomatoes or one 14 oz. canned, diced tomatoes with sauce
  • 3 jalapenos, chopped
  • 2 dried Chipotle "Meco" Chiles reconstituted and chopped
  • 3 Tablespoons Salt Free Adobo Seasoning
  • 1/2 cup of chopped Dried Cilantro
  • 1 12 oz. bottle of dark Mexican beer.

Directions:

  1. Cook bacon in a large skillet or dutch oven until crisp.
  2. Add tomatoes, jalapenos, and chipotles to the bacon, and cook on medium for 10 minutes.
  3. Add beans, Salt Free Adobo Seasoning and Cilantro and let simmer together for 20 minutes.
  4. Add the bottle of beer and finish cooking about 10 minutes
  5. Serve with cornbread or tortillas.
