Our Lemon peel is the zest from dehydrated organic lemons – this is the familiar cut of the outer portion (or skin) of the lemon with the white membrane or pith removed. It is also the portion of the fruit that contains the highest oil content (and provides the most flavor). Dried lemon peel provides the flavor of fresh peel, but because it is dried without preservatives it is a bit darker in color. It is believed that lemons originated in India or China and early writings mention them being harvested in this region since 500 BC. In the 11th century Arabs introduced them into Spain and like many vegetables and fruits, lemons were brought by Christopher Columbus to the Americas on his second voyage to the New World in 1493. Since the 16th century they’ve been grown in Florida. Our Organic Lemon Peel is grown in the US. You know how time consuming zesting your own lemons can be. Once you’ve tried our dehydrated lemon zest and you’ve taste how fresh and flavorful it is we’re sure that it’ll become a staple in your spice cabinet. The zest is the part of the fruit that contains the most oil, and that’s why it’s so often called for in baking. The essential oil content of our Organic Lemon Peel is so high that we prefer to keep in an air-tight glass jars when storing in our own spice cabinet. Traditionally lemon peel was most frequently called for in dessert recipes but we are now finding it appearing more often in recipes such as chicken, dressings, herb teas, marinades, seafood, rice, rubs and vegetables. Helpful hints: Our lemon peel is highly concentrated so only substitute 1/3 the amount of dried lemon peel for any recipe that calls for fresh lemon zest. If your recipe calls for 1 tablespoon of fresh zest, use only 1 teaspoon of our organic dried peel. Also if you wish to reconstitute prior to using place in a dish and cover with water for 15 minutes and then drain off excess liquid. 1 teaspoon of dried lemon peel can be substituted for ½ teaspoon of lemon extract and 1 teaspoon of dried lemon peel is equal to the grated peel of one medium size lemon. Our Organic lemon peel is considered more of a granulated lemon and is ideal for cookies and muffins. If you’re making cheesecake we prefer to grind this up into a powder. We also like to blend with a little bit of sugar and sprinkle it over baked goods for a delightful flavor. Fun fact – whole dried lemons are very popular in Persian and Middle Eastern cuisine. The lemons are picked when ripe, boiled in salt water and then dried in the sun. These can keep for up to 2 years in your spice cabinet.
