Hungarian Pork Stew
This chunky Hungarian stew or goulash is rich in flavor, is healthy and even better is easy to prepare. I went with lean pork as it is loaded with protein while being low in fat and calories. This dish isn't as smoky as our Smoked Paprika Chicken but the cayenne pepper adds a little surprise 'kick' and the sweet bell peppers bring it all together. For this recipe I choose our top grade Hungarian Paprika as it has just a dash more heat than our other paprikas.
Be careful to keep the temp to a low simmer after adding the paprika to keep it from becoming bitter tasting. This would also be a good recipe for the slow cooker. Wouldn't it be wonderful to come home to the wonderful aroma from this dish?
This delightful recipe is low in calories while also being a very good source of Protein, Vitamin A, Vitamin C, Thiamin and Vitamin B6.

Ingredients:
- 1 LB lean pork tenderloin
- 1 Tablespoon olive oil
- 3 Tablespoons Hungarian Paprika
- 1/4 teaspoon Cayenne Pepper
- 1 1/4 cup water
- 1 can tomato sauce (15 oz can size)
- 1 red and 1 yellow bell pepper, seeded, roasted and cut into 1" pieces
- Cracked black pepper to taste
- 2 Cups cooked medium grain brown rice
Directions:
- Cut pork into 1" pieces.
- Bring olive oil to medium high heat in a dutch oven or deep skillet
- Add pork and cook until browned on all sides - about 5 minutes.
- Add the paprika, cayenne pepper, tomato sauce and 1 1/4 cup water.
- Bring to a boil, reduce heat, cover and simmer gently for 30 minutes.
- Add the bell peppers and cook an additional 10-15 minutes until the meat is tender and peppers are soft.
- Serve over rice with cracked black pepper.
