Roasted Carrots with Zahtar and Feta 

4-6 carrots cut in matchsticks
2 or 3 tablespoons
Zahtar

2 tablespoons olive oil
Salt and pepper to taste
1 cup crumbled Feta cheese

Directions:
1.  Combine all ingredients and toss to coat.
2.  Spread on a baking sheet and place in an oven for about 20 minutes at 350°.
3.  Toss after 10 minutes to avoid carrots sticking to the pan.
4.  Top with crumbled feta cheese

Serves: 4-6

Note: You can substitute diced potatoes for the carrots for another side dish.
