Amish Cinnamon Bread
To Make Starter: 3 cup sugar 3 cup flour 3 cup milk Directions: 1. Add 1 cup each of sugar, flour and milk to a glass bowl/jar or to a 1 gallon sealable plastic bag. 2. Let stand at room temperature for 5 days. 3. Stir or knead bag each day. 4. On day 6 add 1 cup sugar, 1 cup flour and 1 cup milk, stir or knead until blended. 5. Let stand at room temperature for 4 more days, stirring or kneading each day. 6. On day 10 you should have 1 cup of starter to use for your recipe and 3 1-cup starters to give away or freeze. Note: This recipe is very forgiving; if you miss a day just pick up where you left off. Bread: 1 cup of starter 1 cup of oil 1/2 cup of milk 3 eggs 1 teaspoon Vanilla Extract 2 cups flour 1 cup sugar 1 1/2 teaspoons baking powder 2 teaspoons Korintje Cinnamon Powder 1/2 teaspoon Sea Salt 1/2 teaspoon baking soda 1 cup chopped nuts (optional) 1 small package of instant vanilla pudding Directions: 1. Combine starter through vanilla in a glass mixing bowl and stir well to combine. 2. In another bowl combine flour through pudding and mix thoroughly. 3. Add flour mixture to wet mixture and stir well. 4. Pour into 2 9x5 loaf pans greased and coated with cinnamon and sugar 5. Sprinkle cinnamon and sugar on top as well. 6. Bake at 350 for 1 hour or until a toothpick comes out clean. This recipe is easily adapted with other ingredients. 1. You can substitute equal parts of mashed banana or applesauce for up to 1/2 cup of oil or use low fat milk instead of whole. 2. You can also reduce the sugar to 3/4 cup. 3. Also try 1/4 teaspoon Ground Jamaican Allspice and 1/4 teaspoon Nutmeg Powder for a little different flavor. 4. Stir in 1 cup peeled, cored, chopped apple and I cup raisins into batter. 5. For chocolate bread, omit cinnamon and vanilla pudding and add 1 small box of chocolate pudding and 3 teaspoons of Organic Cocoa Powder. Bake for 1 1/2 hours. 6. Substitute 1 teaspoon of real Organic Almond Extract for the vanilla extract and white chocolate pudding for the vanilla. 7. Substitute chocolate pudding for the vanilla and add 1 cup of chocolate chips for delicious Chocolate Chip Bread. 8. Try lemon pudding instead of vanilla and add 1/4 cup of Grade A1 Poppy Seed and leave out the cinnamon and nuts. 9. Add 1 cup of grated zucchini and bake 1 hour and 15 minutes. 10. Add 1 small well drained can of crushed pineapple and scatter 2 tablespoons shredded coconut over top half way through baking. |
