Tomato Florentine Soup
1/2 cup tomato paste 1/2 cup water 1 (12oz) can tomato - vegetable juice cocktail 1 (14.5oz) can chopped stewed tomatoes 2 (14.5 oz) cans chicken broth 1 tablespoon white sugar 4 cup fresh spinach, torn 1/8 teaspoon Nutmeg Powder 1/8 teaspoon Red Pepper Flakes Sea Salt to taste fresh Ground Black Pepper Medium Grind to taste 1 cup cooked pasta 1/2 cup cream (optional) Directions: 1. Stir together broth, tomatoes, juice, tomato paste and water in a saucepan Cook over medium heat about 10 minutes. 2. Add sugar, spinach, nutmeg, salt and pepper and cook another 10 minutes or just until spinach is tender. Keep hot without letting it boil. 3. Add cooked pasta and cook 10 minutes more. 4. Stir in cream just before serving if desired. |
