Homemade Chipotle Salsa

6 cups diced fresh tomatoes or 3 cans diced tomatoes
1 medium onion
1 or 2 jalapeno peppers, seeds removed
2 tablespoon Chipotle Powder

3/4 cup fresh cilantro leaves
3 cloves garlic
1 tablespoon lemon juice
1/2 teaspoon liquid smoke
1 teaspoon Sea Salt


Directions:
1.  Finely chop the onion, pepper, cilantro and garlic by hand or in a food processor.
2.  Add chopped tomatoes and stir or add tomatoes to the food processor and process until just combined.
3.  Pour into a bowl and stir in lemon juice, liquid smoke and salt to taste.


Serves: A lot, depending on how big your chips are.

Notes: For a chunkier salsa, drain the can tomatoes. For a hotter salsa use both jalapeno peppers and/or add another tablespoon of Chipotle Powder.
