Quick and Easy No Yeast Cinnamon Rolls with Cream Cheese Glaze Filling: 1/4 cup sugar 2 teaspoons Korintje Cinnamon Powder 1/2 cup finely chopped pecans (optional) Dough: 2-1/2 cup flour 2 tablespoons sugar 4 teaspoons baking powder 1/2 teaspoon salt 1/4 cup cold butter 2 large eggs 1/2 cup milk Glaze: 1 small package of cream cheese 1 tablespoon butter 1/2 teaspoon Vanilla Extract 2 tablespoons milk 2 cups powdered sugar Directions: 1. Preheat oven to 375° 2. In a small bowl stir together the sugar and cinnamon, set aside. 3. To make the dough sift together flour, sugar, baking powder, and salt. Cut in butter until mixture looks like coarse meal. 4. In another bowl whisk together eggs and milk and add to the flour mixture, stirring until just combined. 5. Transfer mixture to a floured surface and need 2 or 3 times until dough forms. Pat dough into a rectangle about 3/4 of an inch thick. 6. Brush dough with melted butter and sprinkle evenly with cinnamon and sugar mixture. Sprinkle with pecans if desired. 7. Roll up dough from the long side. Gently cut roll into 3/4 inch slices with a serrated bread knife. Arrange rolls on a buttered baking pan and bake for about 15 to 18 minutes. Remove from pan promptly and glaze. 8. While the rolls are baking, mix together cream cheese and butter. Add vanilla extract and milk. Slowly add the powdered sugar. Beat on medium speed until smooth and fluffy. Spread on warm cinnamon rolls. Yield: 12-14 rolls Prep Time: 40 min Notes: This recipe has as somewhat different texture than yeast rolls, but still very tasty and much quicker. |
