White, Black and Green Peppercorns are all harvested from the woody, tropical plant Piper nigrum. Our Organic White Peppercorns are harvested in India. Pepper is indigenous to the monsoon regions of Southeastern Asia, Black Peppercorns are the most common of the peppercorns and are picked while the berries have not fully ripened (these are still green). They’re placed in the sun to dry where they become shriveled and turn dark brown in color. White peppercorn berries are allowed to fully ripen before they are harvested and then they are husked and dried. White pepper’s flavor is sharp and pungent with almost sweet undertones while the aroma is musty. Cooks will often season more liberally with white pepper than with black pepper. White pepper is a key ingredient in Chinese, Korean and Thai cuisines. In China when a recipes calls for "pepper" it is typically calling for ground white pepper and it's a staple ingredient in most households. Because they can withstand higher temperatures White peppercorns work exceptionally well in stir-fries. Experienced cooks prefer white pepper in flavoring creamy sauces and various light-colored dishes. When finely ground white pepper will easily dissolves while also seasoning much more evenly, especially when marinating meats. Whole White Peppercorns are commonly used in marinades, pickles and in peppermills.
