Zesty Grilled Jalapeno Chicken
While we love quick and easy meals sometimes you also have to add in some good old fashioned prep time to the mix. This is still a pretty simple meal to prepare and the marinating time is well worth it as the result is your chicken packs some zesty flavor with a touch of heat from the fresh jalapeno. Grilled veggies really round out this outdoor meal and keep it on the healthy side.
The good on this recipe is that it is low in
Sodium and Saturated Fat while also be a good source of protein and
nutrients - especially Vitamins C, B6 and Selenium, Niacin and
Phosphorus.

Ingredients:
Chicken Marinade:
1 lb skinless boneless chicken breast (about 3 breasts)
Directions:
- In a small bowl mix together the lime juice, olive oil, vinegar, cumin, oregano and jalapeno
- Remove the excess fat from your chicken breasts
- Place your chicken either in a large Tupperware dish (or a large zip lock bag)
- Pour your marinade over your chicken, cover and refrigerate for at least 1 hour (8-12 hours provides even more flavor)
- Turn chicken at least once during the marinating process
- Grill or pan fry chicken until done (center should no longer be pink)
- Let your chicken sit for at least 5 minutes to settle before cutting
- Once cooled, thinly slice along the grain of the meat and serve
