Marinated Asparagus with Red Pepper


An excellent quick easy recipe for asparagus. We like this one because it not only has an excellent flavor but asparagus is one of the top 150 best fat burning foods for those on a diet. Asparagus is loaded with nutrients and 10 medium spears gives you 10% of the daily recommended amount of protein and fiber as well as 80 mg of Omega 3 and 6. We make this recipe without salt so it is also ideal for those on a low sodium diet.


Ingredients:
1/2 Cup chopped onion

1/2 Cup red wine vinegar
1 Teaspoons sugar
1 Teaspoon dried Mediterranean Oregano

1 Teaspoon dried Tarragon Leaf

1/2 Teaspoon dry Yellow Mustard Seed Powder

1/2 Teaspoon Worcestershire sauce
1/4 Teaspoon Ground Black Pepper Coarse Grind
1 1/2 Tablespoons olive oil
1 1/4 lbs thin asparagus
1 red bell peppers, cut into strips

Directions:
1.  Snap tough ends off asparagus and blanche until just crisp tender, about 2 minutes.

2.  Combine onion through pepper in a glass bowl.
3.  Whisk in olive oil and pour over warm asparagus and peppers.
4.  Allow asparagus to marinate at room temperature until cool, then refrigerate until serving time.
5.  Return to room temperature before serving.
